Apple Bread

A fast, healthy apple bread loaded with cinnamon and fresh apples. So easy, you don’t even need a mixer, and your house will smell like heaven as it bakes!

Ingredients:

  1. 2 cups of cored, peeled and diced eating apples, such as Granny Smith or Red Gala (about 3 medium)

  2. 1.5 cups of spelt flour

  3. 1 teaspoon baking soda

  4. 1 teaspoon cinnamon

  5. 1/2 cup of unsweetened applesauce

  6. 2 tablespoons of melted coconut oil

  7. 2 tablespoons of almond milk

  8. 1 large egg

  9. 1 teaspoon of vanilla extract

  10. 1/2 cup of walnut halves, roughly chopped

Method:

  1. Preheat your oven to 180C and line a 8×4 inch loaf pan with parchment paper.

  2. In a large mixing bowl, combine the flour, baking soda, cinnamon.

  3. Make a well in the centre of the dry ingredients, then add applesauce, coconut oil, milk, egg, and vanilla combining until smooth. Fold in the apples and walnuts. The batter will be very chunky.

  4. Pour the batter into the prepared loaf pan. With the back of a rubber spatula, press and smooth the top so its almost flat.

  5. Bake for 30 mins, losely tent with foil and then bake for another 20 minutes until a toothpick inserted in to the centre comes out clean.

  6. Place on a wire rack and let cool for 10 minutes in pan. Then turn out onto a wire rack to cool completely. Enjoy warm, at room temperature and/or smeared with butter or even peanut butter!

Store leftover bread in an airtight container at room temperature for four days or freeze for up to two months. Let thaw overnight in the fridge.
