400ml Gin
180ml Chambord raspberry liqueur
160ml Pomegranate juice (POM wonderful is good)
4 tbsp ginger sugar syrup from a jar of stem ginger
grated zest and juice of 2 limes
320ml chilled peppery ginger beer
Half fill a punch bowl with ice. Pour over the gin, Chambord, pomegranate juice, ginger syrup and lime juice, then stir.
Add a few lime wedges, then top up with ginger beer.
Ladle the drink into 8 punch glasses or vintage tea cups!
Make sure everyone has lots of ice. Garnish with lime zest and juniper berries.
