Ingredients:
Shortcrust Pastry
2 red onions chopped small
3 carrots diced
1 small sweet potato diced
1 packet of minced beef – 500g
1 beef stock cube
I made some shortcrust pastry this evening, had quite a lot left over and was looking through a magazine and spotted some cornish pasties…. oh heaven, I love a pasty especially on holiday! I know really it should be made with flaky pastry but surely I can make it with shortcrust.
So rumaging through my fridge, I came up with a couple of onions, some carrots, a sweet potato and a packet of minced beef, that will do nicely. I sauteed the chopped onions then added the meat and vegetables. I added a beef stock cube and cooked it long and low!
I then rolled out my pastry into rough circles and added the delicious meat filling into the middle, draining off any excessive liquid/gravy. I then pulled up the sides of the pastry pinching the edges together resembling a pasty and brushed over with some milk.
I popped them in the oven 180C for about 30 mins until they looked golden brown. Very easy and really tasty!
